It’s Saturday night. Let’s have a little party with shrimp. You might like this recipe. The recipe is adapted from a women Indonesian tabloid, Tabloid Nova, by substituting all purpose flour for pastry flour and adding calamansi juice to marinate the shrimp. If you don’t have any calamansi, don’t bother just add lime juice or lemon juice.
Ingredients:
500 g black tiger shrimp, peeled, deveined and tail-on
2 calamansis
1 tsp salt
1/2 tsp white ground pepper
vegetable oil for deep frying
Breaded batter:
100 g pastry flour
20 g corn starch
1/2 tsp white ground pepper
1/2 tsp salt
2 eggs, beaten
125 g sesame seed
Directions:
1. Squeeze calamansi and drizzle over shrimp. Sprinkle salt and white pepper, toast and let satand for 15 minutes.
2. Combine flour, corn starch, salt and white pepper. Place this mixture in shallow bowl, place beaten eggs in another, and place sesame seed in third bowl.
3. Dip each shrimp in first mixture, shaking off excess, dip in beaten egg, then dip in sesame seed.
4. Heat up the oil at medium-high. Deep-fry shrimp until golden brown. Remove from heat Drain on paper towels. Serve with sweet chili sauce.
