Base Be Pasih // Balinese Seafood Spice Paste

On Thursday January 3rd 2008, I posted Be Pasih Mepanggang which need Base Be Pasih to marinate. This is not a condiment, but a spice paste for several fish and seafood recipes in Balinese culinary, beside Be Pasih Mepanggang, it is also can be used for Sate Lilit Seafood Bali (Balinese Minced Seafood Sate) and Pesan Be Pasih (Balinese Grilled Fish in Banana Leaves)

Base Be Pasih

Ingredients:
10 red chillies, seeded and chopped
6 cloves garlic, peeled and chopped
15 shallots, peeled and chopped
10 cm (4 in) ginger, peeled and chopped
10 cm (4 in) fresh turmeric, peeled and chopped
1 medium-sized tomato
1 tbsp coriander seeds
12 candlenuts
2 tsp dried shrimp paste (terasi), roasted
4 tbsp oil
4 tbsp tamarind pulp
3 salam (Indonesian bay) leaves
2 stalks lemon grass, bruised
50 ml water
salt to season

Directions:
1. Process all ingredients except oil, tamarind pulp, salam leaves and lemon grass until coarsely ground.

2. Heat oil, add all ingredients and stir until fragrant. Add water and cook at medium-high heat for about 15 minutes or until water is evaporated and marinade changes to golden color; stirring frequently. Cool before using.
