Making salad at home from Indonesian or Asian style dressing base such as Gado-Gado (Indonesian Salad with Coconut Peanut Dressing), Pecel (Javanese Peanut Sambal), Acar (Indonesian Pickle), Nuoc Mam Cham (Vietnamese dipping sauce) or Goma-ae (Japanese sesame seed dressing) is often what I do. When I don’t go for authentic style, I use whatever vegetables I can find in the fridge which is what I did with my Fennel, Avocado, Pea Shoot and Orange Blood Salad.
I love Asian dressing style because of the lightness of the flavour except Gado-gado which is a bit creamy. This time I went for Nuoc Mam Cham. Nuoc Mam Cham is very similar to acar, gohu (Manado Green Papaya Salad) or asinan (Fruit Salad) dressing in Indonesia. The different Nuoc Mam Cham is using fish sauce (Nuoc Mam).
The original recipe of Nuoc Mam Cham is using sugar but this time I picked honey instead. The recipe of this salad was very easy! I cut all my carrots and cucumber with a juliene peeler, sliced the celery stalks and red onion really thin, torn kale by hand, and chopped cilantro. Combine all veggies in a big bowl. Dress up with Nuoc Mam Cham and mix. Voila! It’s done.
